Our newest Co-Authored release is quite special - a collaboration between us and Truffle Dog Co, a Seattle based operation that trains dogs to hunt for truffles. We went foraging with them and this is the result!

Dog-found fresh local black truffles, dug out of the ground by our own hands, were aged with our award winning gin in oak casks for over a year. This is a gin with terroir - the earthy, umami notes that come through on the nose are reminiscent of freshly turned soil and blackcurrant. The familiar truffle note is there but not overpowering, and on the tongue the oak mixes with the salinity of the truffles to bring everything together. Over two pounds of fresh truffles were used to make this gin and only 175 bottles were produced.
