Our newest Co-Authored release is quite special - a collaboration between us and Truffle Dog Co, a Seattle based operation that trains dogs to hunt for truffles. We went foraging with them and this is the result!

Dog-found fresh local black truffles, dug out of the ground by our own hands, were aged with our award winning gin in oak casks for over a year. This is a gin with terroir - the earthy, umami notes that come through on the nose are reminiscent of freshly turned soil and blackcurrant. The familiar truffle note is there but not overpowering, and on the tongue the oak mixes with the salinity of the truffles to bring everything together. Over 2 lbs of fresh truffles were used to make ~175 bottles produced.

Cocktail suggestions: The 'Enzo' 2 oz Truffle Gin, 1/2 oz Lillet Blanc, Rinse of Green Chartreuse, dash of orange bitters. Named after the dog leading the hunt. Also - the ever-faithful Negroni, variations on Manhattans, and any gin-based cocktail that is herbal or herbal/floral. Dry martini with sake instead of dry vermouth.
