1.5 oz Stjarna "Jul" Aged Aquavit
.5 oz honey syrup*
.5 oz Bergamot & Tea Liqueur
.5 oz lime
Combine all ingredients in a cocktail tin and top with ice, shake 15 seconds. Strain into a coupe or Nick and Nora glass. Garnish with a lime peel.
*Honey syrup: Combine equal parts honey and boiling water (by volume). Stir until the honey is completely dissolved and allow to cool completely before using.
Salish Tea
2 oz kelp-infused Chapter One London Dry Gin*
.5 oz Bergamot & Tea Liqueur
.5 oz Genepy
1 dropperful Elderflower Lime Bitters
Combine ingredients in a mixing glass with ice and stir until well chilled. Strain into coupe and garnish with a dehydrated lime wheel.
*Kelp gin: add 1g of dried kelp into a 750ml bottle of London Dry Gin, let sit for 14 hours before straining.
